I decided to bring back a bit of summer with these pancakes, which are lightly sweet and lemony, with a little crunch from the poppy seeds. They taste just like poppy seed muffins, except in pancake form.
¾ cup flour
¼ cup whole wheat flour
1/3 cup sugar
1½ tsp. baking powder
½ tsp. baking soda
¼ tsp. salt
1 cup buttermilk
zest of two lemons
¼ cup fresh lemon juice (about 2 lemons)
3 Tbsp. butter, melted
1½ tsp vanilla extract
1/3 cup poppy seeds
1. Whisk together flours, sugar, baking powder, baking soda, and salt.
2. In a separate bowl, blend the remaining ingredients together. Add to the dry ingredients and mix just until combined. Lumps are fine!
3. Cook on a lightly greased griddle until golden on both sides.
